Our honey is collected from our hives located in native Australian forests in the Yarra Valley area.
It’s not blended with agricultural crops (eg. Canola or Lucerne), nor is it added to any imported base honey.
Our harvesting and processing is smart and simple. Our honey is not put through complex processing, filtering, heat treatment or destructive machinery.
Despite the intense labour required, we care for our hives on an individual needs basis. We don’t allow starvation, disease, undue stress or unhealthy housing conditions to persist. Good natural management techniques allow our bees to stay healthy and for us to totally avoid antibiotics and chemical intervention. We also don’t use phosphine or other dangerous fumigants to protect honey combs whilst in storage. As it’s not heat treated, natural qualities and benefits are retained. When removed from the warmth of the hive (30-35degrees) honey can crystallize. For this reason we sometimes need to warm our solid honey gently and slowly to liquefy for packing purposes.
It will, however, eventually harden again when cold.
If you like it runny, store it somewhere warm and, if necessary, apply indirect heat.
As small producers we’re able to tend to our hives individually, we don’t take short cuts.
